Step 1: Make the cupcakes. You can use any recipe you think the kids will like. Sometimes we cheat and use the box cake mixes to save on time. This year I am using carrot cake to make the cupcakes because it fits the occasion, plus the Easter bunny loves carrots.
Step 2: Coat the top of your cupcakes with a layer of white icing (vanilla, butter cream, or cream cheese), but make the icing thick around the edges. You need a dip in the center of the cupcake to place your basket goodies.
Step 3: Now make some edible Easter grass to toss in the center of the cupcake. All you have to do is simply toss a few drips of green food coloring in with some coconut flakes. You can also melt some white chocolate, mix in the green food coloring, wait for the chocolate to harden back up, and shave pieces of it into the center of the cupcakes.
Step 4: Add some candy eggs and other small candies on top of the Easter grass. You can use chocolate covered eggs, jelly beans, Nerds, skittles, M&M’s, Hershey Kisses, malted balls, or even fruit snacks.
Step 5: Finish off the basket look with a handle. Simple bend a Twizzler and press each end down into either side of the cupcake to form the handle.
The entire cupcake, minus the wrapper, can be devoured by the children at the party.
